Each of the national minorities living in the Carpathian region has brought in the Transcarpathian cuisine its own meals and way of cooking, different from the others. Transcarpathians love aromatic and tangy foods, and actively use red paprika “papryga” and black pepper “poper”, as well as garlic, onion, cumin, and all sorts of spicy greens – “chabryk” (thyme), “zeller” (celery), dill and parsley. Also Transcarpathian cuisine tends to use sauces – most often these are sour cream, mushroom and tomato sauces.
